Toasted Coconut Vegan Fudge
Yes you can make fudge without milk products. You will need a double boiler with a stainless steel bowl on top. Open 3 cans of Sweetened Coconut Milk and pour them into the bowl and bring them up to 120 degrees. Add 4 bags of Vegan Chocolate Chips, 1/4 teaspoon Soda and 1/8 teaspoon Salt. Turn off heat and stir mixture until it is smooth. Fold in 2 cups of Toasted Coconut. Scoop mixture into a unlined 1/4 sheet pan with riser. You can sprinkle Toasted Coconut on the top and lightly press it in. Let it cool 4 hours or overnight and then cut it into 1 inch cubes.
