For 2 to 22 people you can create appetizing party trays. I build my savory party trays on a base of greens such as Chard, Kale, Mustard Greens, Bib Lettuce or Romaine. The idea is to create a base that is an even texture and contrasting color. I particularly like Rainbow Chard because of the color and flatness. After you have the base complete on your chosen platter, pile items such as Cherry Tomatoes, Steamed Broccoli, Cheese Curds on the edges of the platter. Fill in with Olives, Dolmas, Cubed Sausages, Smoked Fish, Sliced Sweet Peppers, Antipasto Mixture or Carrot Strips. You can add cup of dips such as Hummus and Cream Cheese Spreads. Don't forget to have Crackers or Chips! For 2 people a small dessert dish will do well. For a group of 20 choose a platter that is about 14 inches. You will need about 1/2 pound of every ingredient for each person. For a large platter choose about 7 to 10 ingredients. Of course for 2 people you will work with less but it can be just as interesting!
