This is a national soup in Greese. There are many versions this is one of them.
Saute 1 diced onion, 2 smashed Garlic Cloves and 2 tablespoons Olive Oil. When this is tender add chopped Roasted Red Peppers and 1 tablespoon diced Fresh Parsley. Now add 1 large can Fire Roasted Tomatoes and 1 small can Tomato Paste. Add 1 drained can of Garbanzo Beans, 3 teaspoons Oregano, 1 teaspoon Black Pepper and 2 teaspoons Salt. Let simmer then taste and adjust Salt to brighten.
