Double Chocolate Fudge
Super easy. You will need a double boiler set-up. I like using a medium soup pot with a stainless bowl that fits the top. Get the water hot. Put 2 14 ounce cans of Sweetened Condensed Milk in the bowl and get this mixture up to 120 degrees. Add 1 bar of Unsweetened Chocolate and 2 pounds of Chocolate Chips. When the chocolate mixture is melted add 1/4 teaspoon Soda and 1/8 teaspoon Salt. The soda changes the PH of the mixture which makes the fudge set up like the slowly cooled mixture that you have seen in a candy shop. You can add 1/3 pound of Dried Sweetened Cranberries, Toasted Walnuts, Toasted Almonds, more Chocolate Chips or Toasted Coconut to the mixture by folding it in. This recipe makes about 3 pounds of fudge. I like using an unlined 1/4 sheet pan with a riser. You could also use a 9 x 10 cake pan. Pour the batter into the pan and let it cool for about 4 hours or over night. Pop it out of the pan and cut it into 1 inch cubes. Enjoy!
