Beef Stew

Years ago I got an enameled 8 quart stock pot and I love making stews in it. This morning I mowed the lawn and rebuilt the porch that is attached to our barn. By 2pm I was knackered. I would like a good stew for tonight and pulled out about 2 pounds of cut up Beef from the refrigerator. I started by getting 4 tablespoons of Olive Oil simmering then added 1 diced up Onion and 1 tablespoon garlic granules (I did not have fresh, poo). After the onions caramelized I added all the beef. Put the lid on and waited for the beef to simmer/ sear. Then I added another diced Onion, 2 pounds diced Carrots (that Ingrid cut up) and 1/2 bunch diced Celery. I next added a quart of Beef Broth. Next I peeled 4 large Potatoes and cut them into good sized chunks. I also put in 2 teaspoons Salt and Pepper and a good large dash of dried Parsley. Now it is on the stove top. That is the picture you see. This took me about 1 hour. I will let it come up to a boil and then put it in to the oven at 350 for about 2 to 4

hours.
