Chicken Mole

Saute 1 diced Onion, 2 large smashed Garlic Cloves, 2 tablespoons Olive Oil. When these are tender add 1/4 pound of Raisens and 4 ounces of Unsweetened Chocolate Bar. When chocolate melts (don't let it burn) add 2 cups Chicken Broth, 1/4 can of Chipolte Peppers in Adobo Sauce (chop up those whole chipolte peppers and save the rest of can for chili) and 1/4 or more pound of Ground Almond Butter. Let this begin to simmer then add 1 large can of Roasted Tomatoes and 1 pound of diced Cooked Chicken. Spice up with 1 teaspoon Ground Cumin and 1 teaspoon Salt. Taste and adjust the salt.

I like adding Smoked Turkey Breast. You can make this vegetarian by switching out the chicken broth with vegetable broth and switching out the chicken with cooked potatoes, tofu or seitan. Remember to let this simmer for a couple hours, stiring often so it doesn't burn.
