It has been a while since I made Curried Chicken Salad, lets see if I can remember.
You will need:
2 Cups Chopped Chicken (cooked chicken breasts or rotisserie chicken)
1/4 Cup Diced Red Onion
1/8 Cup Finely Chopped Fresh Parsley
1/4 Cup Dried Fruit (I used dried sweetened cranberries)
1/4 Cup Mayonnaise
1 Tablespoon Lemon Juice
1 Tablespoon Dijon Mustard
1/2 Tablespoon Curry Powder
1 Teaspoon Salt
Now mix all this together. Be aggressive but not messy. Enjoy on a bed of greens with tomatoes!
