I love Red Lentils. It workes as a dip and stew. This is the stew recipe.
Saute 1 diced Onion, 2 cloves smashed Garlic, 1 large Carrot diced and 2 tablespoons Olive Oil. When tender add diced Sweet Peppers ( you can use fresh or roasted red peppers). When these are tender add 1/2 pound Red Lentils and 3 cups water. Simmer until lentils swell and break, then add 1 can Coconut Milk, 1 tablespoon Curry Powder, 1 teaspoon Smoked Paprika and 2 teaspoons Salt. Add water to get the thickness you like, test and add salt to brighten. Enjoy.
