Use a soup pot to bring 1 pound Split Peas, 1 Quart Water to a boil. Turn down to a simmer, cook for 1 hours or more and add water if it gets to thick. In a sauce pan saute 1 pound of diced Onion, 1 pound of diced Carrots, 1/2 bunch of diced Celery and 2 large cloves of smashed Garlic. Add a tablespoon of Dried Basil, 4 tablespoons minced Fresh Parsley , Black Pepper and Salt to taste. Add vegetables to split pea mixture. Do a final check on the salt and serve.
