This is a thai dipping sauce that I fell in love with when first eating thai food 20 years ago. Get your food processor out and wis up these ingredients. 1/2 cup Unsalted Smooth Peanut Butter, 2 tablespoons Tamari, 2 tablespoons Lime or Lemon Juice, 4 teaspoons Natural Sugar, 4 teaspoons Chili Garlic Sauce and 2 teaspoons Fresh Grated Ginger. You may need to add a little water (1 cup) or so to get creamy and dippable. Enjoy!
It is cucumber time. English Cucumbers go well with this dish. If you use regular Cucumbers peel off some of the skin. 1 cup Hot Water mixed with 1 cup Natural Sugar and 1 cup Rice Wine Vinegar. Dice 3 English Cucumbers and 1 medium Red Onion. Mix all together with some 1 teaspoon Dried Chili Flakes. Chill in the refrigerator and serve with Chicken Satay and Thai Peanut Sauce with a side of Basmati Rice. This will keep for two weeks in the frigerator.
This is a simple dessert, very pretty and delish. You will need Pound Cake or Lady Fingers. Some Sweetened Cream Sauce, Lemon Curd, a Fruit Preserve and Fresh Fruit such as Strawberries or Blueberries. Start by smearing Lemon Curd on the small plate of your choice, Cut a thin 2 inch x 4 inch piece of Pound Cake and push it into the lemon curd. Don't you love hard boiled eggs but don't like to peel them? Well try this. Bring a pot of 6 cups of Water to boil. Add 6 Eggs. Put a timer on for 15 to 17 minutes. Start timer when water comes back to boiling. After timer goes off submerge eggs in cold water. The peals should come off easily. Use this chopped in potato salad or make Eggs Goldenrod or just eat them as they are. Keep them in refrigetor for 1 week.

Next is Salmon Salad. Super, very super simple. 1 pound fresh chopped Spinach. 1 pound Giant White Beans and 1 package Smoked Salmon. Put spinach in the bowl you want to use, add beans and sauce. Remove the skins of the Smoked Salmon and chop into bite sized pieces, mix into salad. Serve. You can use Smoked Turkey, Baked Tofu, diced flavored Tempeh, cherry Tomatoes or roasted Sweet Peppers. We are going to make Potato Salad, Salmon Salad and Spinach Wild Rice Salad. They are all simple recipes that can be modified to your hearts content. The first salad is Potato Salad. Start with 5 pounds of Potatoes. Pick potatoes with nice skins and few blemishes. You will need a large pot of water that you will bring up to a boil. Make sure the potatoes are clean and pop them into the water. It will take about a half hour to cook the potatoes, test them by poking them with a
